ФУНКЦИОНАЛЬНЫЕ ПРОДУКТЫ С ИСПОЛЬЗОВАНИЕМ ВТОРИЧНОГО СЫРЬЯ ПРОИЗВОДСТВА СОКА И ЕГО ПИТАТЕЛЬНОЙ ЦЕННОСТИ
Abstract
В данной статье рассматриваются вопросы повторного использования отходов, образующихся в процессе производства соков, с учётом их переработки в качестве вторичного сырья. Приводятся сведения о том, как включение этих отходов в состав пищевых продуктов позволяет обогащать их различными минеральными и питательными добавками и, таким образом, обеспечивать их функциональность.
